 Role of Bromelain in global market in different sector


Bromelain is a group of enzymes found in the fruit and stem of the pineapple plant. Pineapple is native to the Americas but is now grown throughout the world in tropical and subtropical regions.

Bromelain is one of the protease enzymes found in the pineapple plant. Steam bromelain is a major protease present in extracts of pineapple stem while fruit bromelain is the major enzyme fraction present in the juice of the pineapple fruit some other minor cysteine endopeptidases are also present in the pineapple stem.

Extraction & purification of Bromelain

While bromelain extraction from pineapple stem is commercially known, the presence of bromelain is reported also in the core , peel, and crown of pineapple fruit. Wich is slightly harder in texture. one of the major wastes generated at least 17{824dd0b0a187a2257a05dae7361937959a4a13c4342f1dda70ce6e72fd831949} of the fruits by the pineapple processing industries.

In bromelain extraction required a condition like pH, temperature, buffer & also buffer strength on bromelain activity & protein content were standardized (extraction under refrigerated condition ) showed a decrease in bromelain activity with duration

Minerals analysis showed the presence of potassium, magnesium, calcium, sodium in extracts.
