Beta glucanase enzyme:-

Commercial β-glucanase preparations are used to hydrolyze barley gums in the brewing industry. Bacillus species produce them. Fungi also make fungal β-glucanases of the Aspergillus group. They are often formed as a side activity in pectinase preparation

The different functions of beta-glucanase:

  • Reduce wort viscosity enzyme
  • Filteration enzyme

 

Application:

It hydrolyzes the β1,3-glycosidic bonds found in beta-glucans in cell walls. For reducing the viscosity of barley, wheat, rice, rye, and malt other cereal grains, which have high β-glucan contains.

A Beta-Glucanase enzyme preparation used to reduce wort viscosity and to improve solid/liquid separation for filtration and lautering purpose.
